Lomondo's caramelised balsamic is probably one of the only truly commercial Australian made balsamics and is produced in Mudgee on the Central Tablelands of NSW. It been aged in oak barrels for a minimum of three to five years. The red wine vinegar used in the development stage has been hand made from local Mudgee red wine grapes.
